Tuscan PGI Cassia Vetus is guaranteed by the Consortium for the protection of Tuscan PGI Extra-Virgin Olive Oil. Olives must come from the territory indicated in the Specifications: the province of Arezzo. Their origin is guaranteed by the consortium, which also ensures the quality profile of the oil, inspects its characteristics and controls all stages of production: the harvesting, pressing and bottling of the olives.

Cassia Vetus Extra-Virgin Olive Oil provides the greatest assurance in terms of authenticity. The Consortium affixes its label to each bottle, attesting that the entire production chain has taken place only in Tuscany, from the plant to the packaging.

The oil is also subjected to chemical and sensory testing (tasting by examiners approved by the Ministry of Agriculture) to check its compliance with all specifications. The result is a 100% Tuscan olive oil. Tuscan PGI Oil is also an indication of the strong traditional association of the product with the territory, as certified by the European Community Protected Geographical Indication (PGI) marking and by strict production regulations.
